Tin may require greasing.
250g of fresh cooked mashed pumpkin
1/2 tin of condensed milk (200g)
85g dark brown sugar
1/2 tps mixed spice
1/2 tps ground cinnamon
Cut into the beast and remove it’s innerds (seeds, stringy bits and all)
Chop into cubes and put in a sauce pan and cover with water.
Boil for about 30 minutes until tender, remove from heat and drain thoroughly.
Peel when cool.
Chewy Biscuit Base
- 8 digestive biscuits
- a small cube of butter
- 4 generous tbs of chocolate or chocolate orange sauce
Crush biscuits into fine crumbs and cream the sauce and butter into them to bind the mixture.
Press the biscuit layer on top of the pastry gently so not to disturb the layer.
Mash the Pumpkin with a potato masher and drain again with a sieve to remove further excess water.
Stir in condensed milk, eggs, sugar and spices. Might be worth blending it with a hand blender.
Pop in the oven for 20-25 minutes.
Insert a knife , if it emerges clean- it is ready to devour!
